No-Bake Apricot Energy Bites

Amazingly delicious no cook apricot energy bites is gluten-free and vegan. A perfect sugar-free snack made with flax seeds, healthy nuts and desiccated coconut!

These little guys remind me of my childhood years when you could buy these delicious apricot fruit balls from the canteen! Considering how good they tasted I can only imagine the calorie content was high but hey calories didn’t seem to count when you were a kid anyway! I digress! These apricot energy bites are paying homage to those great younger years – turns out they may a pretty darn good snack to make ahead and keep in the fridge for the week ahead! 😃

No-Bake Apricot Energy Bites

Amazingly delicious no cook apricot energy bites is gluten-free and vegan. A perfect sugar-free snack made with flax seeds, healthy nuts and desiccated coconut!

Ingredients

  • 1 1/2 cups Dried Apricots
  • 1/4 cup Raw Almonds 
  • 1/4 cup Walnuts
  • 3 tbsp Desiccated Coconut (unsweetened)
  • 1 tsp Flaxseeds
  • 1 tsp Vanilla essence
  • 1/2 tsp Cinnamon

Method

  • Transfer apricot, walnuts, almonds, flaxseeds, coconut, and cinnamon powder to a food processor.

  • Blend to combine.

  • Add vanilla essence and mix until blended.

  • Roll the apricot mixture into balls.

  • Enjoy them as is or dust the energy bites with desiccated coconut!
