No-Bake Peanut Butter Balls

I don’t know about you but I love a good snack! Especially a full day in front of the computer can have me wanting all the snacks and lead to a bit of mindless eating. For days like this I love to whip up these small but mighty Peanut Energy Bites.  If you’re a regular to my recipes you’ll know that I only do quick and easy. I can say this is another one that adheres to repertoire! Instead of the semi-sweet chocolate chips we’ve chosen to use cacao nibs to lower the sugar content. 

No-Bake Peanut Butter Balls

Calories Per Serve 180kcal
Makes 10 balls

Ingredients

  • 1/2 cup natural peanut butter (I used Mayvers)
  • 1/3 cup pure maple syrup – ¼ Snacks 1 teaspoon pure vanilla extract
  • 1 1/2 cup rolled oats (swap for GF oats if needed)
  • 2 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1/3 cup cacao nibs 

Method

  • In a large bowl, add the peanut butter, maple syrup and vanilla. Stir until smooth and well combined.

  • Add the oats, flax seeds, cinnamon and cacao nibs. Stir until the dry ingredients are evenly coated with the wet mixture.

  • Line a baking sheet with parchment paper.

  • Scoop out a heaping tablespoon of the mixture and roll into a 1 ½-inch balls. Transfer to baking sheet. Continue until all the mixture is used up.

  • Chill in the fridge for at least 30 minutes to firm up.

  • Store in an airtight container and enjoy 1 to 2 as a snack or dessert.
