These little guys remind me of my childhood years when you could buy these delicious apricot fruit balls from the canteen! Considering how good they tasted I can only imagine the calorie content was high but hey calories didn’t seem to count when you were a kid anyway! I digress! These apricot energy bites are paying homage to those great younger years – turns out they may a pretty darn good snack to make ahead and keep in the fridge for the week ahead! 😃
No-Bake Apricot Energy Bites
Amazingly delicious no cook apricot energy bites is gluten-free and vegan. A perfect sugar-free snack made with flax seeds, healthy nuts and desiccated coconut!
- 1 1/2 cups Dried Apricots
- 1/4 cup Raw Almonds
- 1/4 cup Walnuts
- 3 tbsp Desiccated Coconut (unsweetened)
- 1 tsp Flaxseeds
- 1 tsp Vanilla essence
- 1/2 tsp Cinnamon
Transfer apricot, walnuts, almonds, flaxseeds, coconut, and cinnamon powder to a food processor.
Blend to combine.
Add vanilla essence and mix until blended.
Roll the apricot mixture into balls.
Enjoy them as is or dust the energy bites with desiccated coconut!
