Granola is one of those things that are super delicious but sometimes for good reason – it can contain lots of added sugar without you even knowing. The best thing about making your own granola is that you can add in whatever nuts, seeds or dried fruit you fancy the most! This recipe can be made in a batch on a Sunday and used as a snack during the week or a light breakfast especially on a warm summers day with some greek yoghurt and raspberries.
Super Crunchy Golden Granola
This recipe can be made in a batch on a Sunday and used as a snack during the week or a light breakfast especially on a warm summers day with some greek yoghurt and raspberries.
Dry
- 1 cup Rolled Oats
- 1 cup Almonds chopped
- 1/2 cup walnuts chopped
- 1/4 cup pepita seeds
- 1/2 cup desiccated coconut
- 1 tsp cinnamon
Wet
- 4 tbsp coconut oil melted
- 4 tbsp honey melted
Preheat oven to 180 degree celcius (350F)
Melt coconut oil and honey together over the stove or microwave for 40 seconds
In a large bowl, mix together oats, chopped almonds and walnuts, pepita seeds, desiccated coconut and cinnamon
Pour coconut oil and honey mixture over dry ingredients and mix until well coated
Line a baking tray with baking paper and evenly distribute granola mixture across the tray
Bake for 25-35 minutes, rotating mixture at half way to ensure the edges don’t burn
Remove from oven and allow to cool (the mixture will become more crunchy once cooled)
