The BEst Spaghetti Bolognese You’ll Ever Have!
One of our go-to mid week dinner recipes is this veggie loaded spaghetti bolognese. Not only that it has a bunch of delicious veggies and is SUPER simple to make.
- 500g minced meat
- 1 Brown onion
- 2 zucchini
- 1 eggplant
- 2 carrots
- 2 celery stalks
- 8 mushrooms
- 2 cups Vetta pasta
- 2 crushed Garlic cloves
- Fresh basil
- 1 tbsp Balsamic glaze
- 2 can Diced tomatoes
- Leggos Tomato paste
- Italian herbsÂ

Firstly brown mince, seasoning with salt and pepper

Add onion, garlic and mix to combine

Add all vegetables: eggplant, carrot, celery and zucchini, mushroom and season again with salt and pepper and mix well

Cover with lid to steam vegetables for a couple of minutesÂ

Add diced tomatoes and tomato paste and a dash of water if you feel the mixture is too thick

Add Italian herbs and balsamic vinegar and fresh basilÂ

Let mixture simmer and reduce for 30-40 minutes depending on thickness desired.Â

Serve with pasta and ENJOY!
