The BEst Spaghetti Bolognese You’ll Ever Have!

Makes 4

Ingredients

  • 500g minced meat
  • 1 Brown onion
  • 2 zucchini
  • 1 eggplant
  • 2 carrots
  • 2 celery stalks
  • 8 mushrooms
  • 2 cups Vetta pasta
  • 2 crushed Garlic cloves
  • Fresh basil
  • 1 tbsp Balsamic glaze
  • 2 can Diced tomatoes
  • Leggos Tomato paste
  • Italian herbs 

Method

  • Firstly brown mince, seasoning with salt and pepper

  • Add onion, garlic and mix to combine

  • Add all vegetables: eggplant, carrot, celery and zucchini, mushroom and season again with salt and pepper and mix well

  • Cover with lid to steam vegetables for a couple of minutes 

  • Add diced tomatoes and tomato paste and a dash of water if you feel the mixture is too thick

  • Add Italian herbs and balsamic vinegar and fresh basil 

  • Let mixture simmer and reduce for 30-40 minutes depending on thickness desired. 

  • Serve with pasta and ENJOY!
